
I was diagnosed with Celiac Sprue in 2008, while serving on active duty with the Washington Army National Guard. It was such a relief to finally have an explanation for why I felt so lousy! By the time I was diagnosed, I had been sick for several years. I had developed such an aversion to food, I didn't feel that I was up to the task of really changing my diet. Every meal became a challenge. Eventually I just ate the same things over and over again. They were "safe" (meaning gluten-free) and yet they were boring! I slowly discovered a large selection of gluten-free foods on the market. My research online also revealed an entire community of gluten intolerant people just like me! I even encountered a gluten-free store in Tumwater that gave me hope of loving food again! (Thank you G.F. Joe's!) So when I faced the decision of a new career, there was no question what I would do. I loved serving my country, but my calling was closer to home. It was time for Everett, Washington to have a gluten-free store. But not just a store. We needed a place where we could commune and share our experiences and needs. I commited to opening the store in February 2009, and by November it was a reality.
The state of your health is without a doubt linked to what you eat on a regular basis. If you have any question that gluten is a problem for you, take the time to research the symptoms and talk to your physician. Come in and read the literature. Your quality of life might depend on it.
